Mocha Macarons

This was a first for me … I’ve never before played around with the dark art of macaron making. It was a lot of faffing about with different things and precise instructions (not my favourite way of cooking), and while my mocha creations tasted delicious I’m not sure I’d hurry to make them again. But it’s OK macarons of the world, I’ll still love you forever more.

Making … Anzac biscuits (thick & chewy), lemon yoghurt cake for a certain special someone’s birthday.

Watching … The Avengers (hello RDJ, hello Chris Hemsworth), Mission Impossible: Ghost Protocol again (lots of fun – an easy watch), X-Men First Class again (why hello Mr Fassbender). Clearly it’s been a month for blockbusters and handsome men (hello husband!).

Writing … lots and lots.

Reading … Frankie, Casual Days (makes me miss Singapore), Super Natural Every Day (lots of delicious meals).

Enjoying … the cool and rainy weather (autumn is so lovely).

After finishing my couch-to-5k running program a while ago, I’ve since embarked on a half-marathon training program just for the hell of it. I’m only in week two, but I’m falling more and more in love with my treadmill, so it’s been going really well so far. Before I go, I must also say thank you for your very sweet comments on my previous post … you guys are the best! :)

The BEST EVER Choc Coconut Slice Recipe

Are you a choc coconut slice aficionado like me? If so, do read on as I’m about to share the recipe for the greatest Choc Coconut Slice of all time! … That’s a big claim I know, but please believe me when I say you must make this slice for yourself, consume said slice, and then glory in its rich and wondrous goodness. It’s crispy on the outside and just slightly gooey on the inside – in other words, it’s fantastic!!

Feeling a bit down in the dumps and generally blah given all the bad stuff that’s currently happening in the world – both close to home and far away, I sought comfort in the warm arms of baking. In my opinion you just can’t go past a chocolate slice on such occasions, and I firmly believe that chocolate and coconut should unite together as often as possible.

Heading to Mr Google for inspiration, I came across this recipe and decided to make it my own. It took hardly any time at all to make, and didn’t last much longer once it was out of the oven. While the original recipe was pretty good, I did make a few minor modifications of my own along the way. Please note, if you’re doing your best to be healthy it’s probably best to overlook the massive amounts of butter and sugar used …

After you’ve preheated your oven to 180°C, you’ll need to grease a baking tray and line it with baking paper (you know how sometimes you don’t bother with baking paper even though a recipe says to … in this case it makes all the difference to slice failure or success).

1. Mix all these dry ingredients together in a bowl:

  • 3 crushed wholewheat breakfast biscuits (Vita Brits or Weet-Bix)
  • 1 cup desiccated coconut
  • 1/2 cup caster sugar
  • 1 cup self-raising flour
  • 2 (generous) tablespoons cocoa

2. Melt 150g butter and pour it over the dry ingredients. Add 1 teaspoon of vanilla essence and mix it all together. Spoon the mixture into your chosen baking tray and press it down until roughly level (it makes the icing so much easier to apply).

3. Bake the slice for roughly 15 minutes. Then it’s time to make the icing – strangely enough, this slice is actually iced while it’s still hot (I don’t think I’ve ever come across that before).

4. To make the icing, mix together: 1 1/2 cups icing sugar mixture and 1 1/2 tablespoons cocoa in a small bowl. Add 2 (generous) tablespoons of hot water and 1 tablespoon of melted butter and mix. I found that I needed to add more hot water to get the icing to ‘spreading’ consistency, but this is more of a ‘follow your instinct’ kind of situation. Just keep adding hot water gradually until a spreadable paste is achieved. Don’t worry if it feels a bit too stiff, as you begin to spread the icing on the still-hot slice it will become more malleable.

5. Leave the slice to one side until it cools further and the icing sets. So now you’ve got your finished and beautifully iced slice, there’s little more to do apart from eat it!

Now the original recipe suggested this slice makes 24 serves … hahahaha … they obviously don’t know how the slice portioning process works in my household. But needless to say, this slice was very satisfying even if we didn’t come at all close to achieving 24 serves.

The Twelve Days of Chocmas (Day Twelve)

We’ve made it! Today brings us to day twelve, and therefore the conclusion of Chocmas … I hope you’ve enjoyed this little diversion over the festive season, I’ve certainly enjoyed chatting with you all about one of my great loves … chocolate!

Orange and chocolate. I don’t know why they work so well together, but they just do. While I’d normally go for Jaffas, they were nowhere to be found over Christmas – so these are ‘orange chocolate balls’ from Darrell Lea (an Australian chocolate shop). Whatever they’re called, and whoever makes them … orange chocolate treats are always enjoyable.

Before you go, here’s a little re-cap of the entire ‘Twelve Days of Chocmas’ journey … my oh my, that’s a lot of chocolate! Don’t worry though, all these little chocolates found themselves a very good home.

The Twelve Days of Chocmas (Day Eleven)

How’s today looking for you? All bright and colourful I hope … I’m back in the office today after my little break over Christmas and New Year. While my time off has gone by really quickly, I also feel like I got a lot of things done … though of course that to-do list never seems to get any shorter.

On the eleventh day of Chocmas,

Smarties are a lovely sweet treat, though I suspect I enjoyed them much more as a child than I do as an adult. Whereas back then I was happy just eating anything sweet, now I prefer ethically produced chocolate from the dark end of the spectrum … isn’t it amazing how things change?

PS. With all this talk of chocolate, I’ve reminded myself that I need to re-join the gym this week. That’s OK because I really like the gym, the only trouble is finding the time each day in which to squeeze it in. I’m also yet to decide whether to go more for traditional aerobics classes or give yoga and pilates a go. Do you have any healthy plans for your 2011?

The Twelve Days of Chocmas (Day Ten)

Well we’re really getting to the business end of this little Chocolate festival now – just two more days to go and we’ll be done. That’s probably a good thing given the heat and humidity I’ve been ‘enjoying’ the last few days – it hasn’t exactly been good chocolate eating weather … more like chocolate melting weather.

On the tenth day of Chocmas,

After dinner mints are a perennial favourite – with their crisp chocolate shells and smooth gooey mint insides … I remember sneakily eating a whole lot of these as a child … what a sensible youth I must have been, because honestly it’s far too hard to stop at just one.

The Twelve Days of Chocmas (Day Nine)

Two days into the new year and things are feeling pretty good, I hope they are for you too. I’ve been keeping myself busy with yet another wardrobe clean-out, some gardening, and a re-organisation of my office … it’s funny how things can look better with just a simple change of perspective.

On the ninth day of Chocmas,

I don’t know about you, but for me Maltesers always say ‘movies’ … which is strange because I don’t always eat them at the cinema … Speaking of movies, I realised that the last movie I watched in 2010 and the first movie I watched in 2011 are intimately connected – each of them being a Tron film.

PS. My list of ‘movies to watch’ is growing rather long, so I really need to get started before it spirals completely out of control. Have you been working on any lists of your own? It’s certainly the list-making time of year.

The Twelve Days of Chocmas (Day Eight)

Happy New Year! Did you get up to something fantastical last night to see in the new year in true celebratory fashion? I had a quiet night in with the Mr and the dog – away from the crowds, the drunks and the madness.

On the eighth day of Chocmas,

my true love sent to me

Eight choc mint balls,

Six chocolate peanuts,

Four choc rochers,

Three lindt balls,

Two golden roughs,

And a tasty minted pattie.

And with that we’re back to my favourite combination of chocolate and mint. The only thing I don’t really like about these choc-mint balls is their colour – I wish their shells were a deeper, darker green … By the way, have you also noticed that all the chocolates we’ve been feasting on during Chocmas have been round in shape?

PS. On this first day of 2011 I hope you find yourself happy, healthy and surrounded by all you love most. Do you have grand plans to make changes in your life this year? I do, and I’m super excited at getting started on all the things I want to achieve … If all things go according to plan, my year will be filled with writing, travelling and dreaming … How about you?

Well today’s rather a big day … it’s not long now until the new year is here. What will you be doing when the clock strikes midnight tonight? I wish you a fantastic time whatever you get up to.

Did you know that because these are mini m&m’s you can eat more of them? (it’s a scientific fact that they have less calories than the regular sized versions … honest).

As for me, I spent today going to the movies (watching Tron in 3D), having a lovely lunch of sushi and doing a bit of shopping … nice and relaxing.

The Twelve Days of Chocmas (Day Six)

So here we are – we’re halfway through this festival of chocolate. That means that my plans to eat healthier and live better are getting closer by the day. Speaking of which, how are you going with deciding what your new year resolutions will be?

On the sixth day of Chocmas,

Not only are these peanuts chocolate-covered, but they’re DARK chocolate covered … that means they’re extra healthy (being full of protein and antioxidants). Though the downside is that they are far too easy to eat …

PS. The sun has started shining again in my part of the world, how about you? The fine weather saw me take a quick excursion into the city for a few bits and pieces, though I’m happy to say I was not tempted by any of the sales … online shopping is much less stressful! What did you get up to today?

The Twelve Days of Chocmas (Day Five)

We’re almost half-way through this little celebration of chocolate. It’s incredible how quickly time flies when you’re having chocolatey-fun. It’s still unseasonably cool in my part of the world (not that I’m complaining) … but I do hope you’re keeping safe wherever you are.

On the fifth day of Chocmas,

my true love sent to me

Five giant buttons,

Four choc rochers,

Three lindt balls,

Two golden roughs,

And a tasty minted pattie.

Buttons in any form very much appeal to me, so being able to indulge in a chocolate version is really just an extension of that love. These are giant buttons too, so that means they really maximise their chocolate goodness. The only way these would be improved is if they were dark chocolate buttons … after all, dark coloured accessories match everything.

PS. I’ve been spending some time sorting through my little pile of Christmas goodies and reorganising my office. That means that amongst other things, I’ve been working out what book I’ll be reading next and redeeming some iTunes gift cards. Have you introduced your new gifts to your old possessions yet?
